Songs of America and the South bank show Born At The Right Time are the only S&G "behind the music" type things I know of....unless anyone knows different.

Right, but Songs of America isn´t available anywhere, and I think it hasn´t been aired on TV since 20 years or more :-)

The Born At The Right Time VHS is more about Paul Simon than the duo, but Artie is interviewed too. bTW I´ve read a long time ago that this one should be available on DVD... but never saw it.

I think "Songs of America" is also regularly on sale on http://www.cd-gold.co.jp/. It´s a japanese firm that sells bootlegs over the internet. They have some titles with PS/S&G, but not much compared to what they can offer from other artists - and it´s well overpriced! Worth a look though.
